Your profile, and the list of games you mark as owned, wished for or finished, are private unless you turn on a public handle (and, separately, your public shelf). Only totals per game, such as how many players own it, are shown to everyone. If you sign in with Steam, or connect a Steam account to another sign-in, and press Import, we read your Steam game list once, keep only the games that match our catalog, and store nothing else (no playtime). A connected Steam account is kept as its public Steam ID only, and you can disconnect it at any time. Delete your account at any time and all of it is erased.
